Job Title: CDP (Chinese Cuisine) Job Summary: The Chef de Partie (CDP) in the Chinese section is responsible for preparing, cooking, and presenting Chinese dishes to the highest standards. The CDP will oversee a specific area within the Chinese kitchen, ensure timely preparation, and maintain high levels of food quality, safety, and hygiene. Key Responsibilities:
Prepare, cook, and present Chinese cuisine, including traditional and contemporary dishes.
Manage a specific section of the kitchen, such as wok, dim sum, or soup, ensuring the section is clean and organized.
Work with the Sous Chef and kitchen team to develop new Chinese dishes and maintain consistency in preparation.
Supervise and guide junior kitchen staff in the preparation, cooking, and presentation of dishes.
Ensure all dishes are prepared to order and delivered on time, with attention to detail in taste, presentation, and portion size.
Monitor food stock and ingredients for the Chinese section, ordering ingredients as needed and minimizing wastage.
Maintain high standards of cleanliness, ensuring that the section adheres to health and safety regulations.
Assist in menu planning, pricing, and costing of Chinese dishes.
Maintain knowledge of industry trends and continuously introduce new techniques and ideas for Chinese cuisine.
Work closely with other sections to ensure smooth kitchen operations during service.
Adhere to all kitchen safety protocols and maintain proper storage of food and ingredients.
Skills & Qualifications:
Proven experience as a Chef de Partie or in a similar role within a Chinese kitchen.
In-depth knowledge of Chinese cooking techniques and regional Chinese cuisines (e.g., Cantonese, Sichuan, Hunan).
Ability to work in a fast-paced kitchen environment and manage high-pressure situations.
Strong leadership skills with the ability to train and mentor junior staff.
Excellent time management and organizational skills.
Keen attention to detail, ensuring consistency in presentation and taste.
Knowledge of food hygiene and safety standards.
Culinary certification or relevant experience in Chinese cuisine is preferred.
Work Conditions:
