MÔ TẢ CÔNG VIỆC
I.RESPONSIBILITY MEANS
1.Supervise the function of all kitchen employees, facilities and costs, hence contributes to maximizing the overall Food & Beverage department profit.
2.Control and analyse on a on-going basis the following:
+Quality levels of production and presentation.
+Guest satisfaction.
+Merchandising and Marketing.
+Operating food cost.
+Cleanliness, sanitation, hygiene.
II.ADMINISTRATIVE RESPONSIBILITIES
1.Reponsible for the preparation of menus taking into consideration the following:
+Local requirements
+Market needs
+Competition
+Trends
+Potential costs
+Availability of food products
+Merchandising and promotion
+Inspects perishable food items received for quality control.
+Passes onto the Purchasing Manager his daily market list requirements.
3.Produces up-to-date standard recipe file for all food items listed on the menus, to include:
+Sales history
+Actual cost
+Production time
+Picture of the finished product
+Performs related duties and special projects as assigned.
III.TECHNICAL RESPONSIBILITIES
Responsible for the production, preparation and presentation of all food items, to ensure highest quality at all times.
IV.HUMAN RESPONSIBILITIES
+Establish and maintains effective employee relations in his section.
+Conduct such functions as interviewing, hiring, employee orientation, performance appraisal, coaching, counseling, and suspension if necessary, to ensure appropriate staffing and productivity.
+Develop formal training plans and conducts on the job training sessions for kitchen employees.

YÊU CẦU CÔNG VIỆC
1.Knowledge and Experience
- Diploma from a reputable Hospitality Management / Culinary school preferred
- Additional certification(s) in Food & Beverage will be an advantage
- Minimum 5 years of experience in managing food production & culinary operations in a hotel gained from working in key cities / resorts destinations globally
- Excellent reading, writing and oral proficiency in English language
- Good working knowledge of MS Excel, Word, & Power Point
2.Competencies
- Strong leadership, interpersonal and training skills
- Good communication and customer contact skills
- Ability to multi-task, work well in stressful & high-pressure situations
- Well-presented and professionally groomed at all times
