The Team Lead, Food Services prepares patient diet information for use by cooks and Food Service Assistants to complete the preparation of foods. Oversees the activities of all food production and service on the assigned shift.
Duties/Responsibilities:
Examines diet orders received from hospital units and prepares a total of general and modified diets, including total quantities of specific foods, such as vegetables and meats, to be prepared by production staff.
Processes new diet orders and changes using the computer system.
Answers telephone and intercom calls to relay information to food production staff concerning meal changes, supplies needed for catering or cafeteria service, etc.
Prepares and delivers formulas and special nourishments to unit pantries.
Supervises food production and service for the cafeteria, patients, vending, and catered services.
Assists in referrals to Clinical Dietitians for continuity of patient care.
Assists in implementing and monitoring established cost control procedures.
Performs schedule changes as needed to provide staffing to meet service requirements.
Monitors food quality, temperature, sanitation, FIFO inventory controls, and HACCP for the department.
Examines patient trays for completeness and correct diet before delivery.
Requests assistance from Maintenance, Environmental Services, Stockroom, and other departments as needed to accomplish departmental tasks and maintain production.
Confers with company representatives and sales staff concerning services, products, orders, and deliveries.
Education:
High School diploma or equivalent preferred
Experience:
Two to three years of restaurant, institutional, or school food service experience required. Hospital or nursing home food service and/or supervisory or management experience is preferred.
