A Commis 1 in a Chinese kitchen is responsible for assisting with the preparation and cooking of various Chinese dishes while supporting senior chefs. This role requires a solid understanding of Chinese culinary techniques, ingredients, and equipment.
Key Responsibilities of a Commis 1 in a Chinese Kitchen:
Pay: ₹17,000.00 - ₹20,000.00 per month

Key Responsibilities of a Commis 1 in a Chinese Kitchen:
- Food Preparation:
- Preparing ingredients for Chinese dishes such as chopping vegetables, slicing meats, and prepping seafood.
- Assisting with marinating meats and preparing sauces, broths, and stocks essential for dishes like stir-fries, soups, and dim sum.
- Understanding and handling various Chinese ingredients (e.g., soy sauce, ginger, garlic, Sichuan peppercorns, sesame oil).
- Cooking Assistance:
- Assisting with the cooking of dishes under the guidance of senior chefs, such as stir-frying, steaming, boiling, and deep-frying.
- Handling specialized cooking techniques used in Chinese cuisine, such as wok cooking, steaming in bamboo steamers, and using the proper amount of heat and oil.
- Maintaining Hygiene and Cleanliness:
- Ensuring that the workstations, tools, and utensils are cleaned and sanitized after use.
- Following strict hygiene standards to maintain cleanliness in the kitchen.
- Assisting the Chef de Partie:
- Supporting the Chef de Partie and senior chefs by preparing ingredients and ensuring that the cooking process runs smoothly.
- Helping to ensure timely service by organizing prep work and cooking in accordance with the restaurant’s pace.
- Use of Equipment:
- Learning to handle Chinese kitchen equipment like woks, steamers, cleavers, and rice cookers safely and efficiently.
- Understanding the proper care and maintenance of these tools to ensure their longevity and effectiveness.
Pay: ₹17,000.00 - ₹20,000.00 per month
