Head Brewer

HEAD BREWER
71 Brewing is an award-winning brewery based in Dundee, which has seen a large increase in production volumes over the last year across all channels.
We are looking for someone who is passionate about beer, knows the importance of attention to detail, well-organised and comfortable working in a fast-paced, ever-evolving environment. Strong interpersonal and communication skills are also important, as you will be working closely with all other teams at 71 Brewing, especially the packaging and warehouse teams.
Based in the characterful surroundings of the old Blackness Ironworks in central Dundee you will be working with our state of the art 30h L SK Brewplant, over 900h L of fermentation capacity, onsite canning and kegging capabilities and extensive pilot system.
We offer a welcoming environment for candidates with strong interpersonal and communication skills as you will be working closely with all other teams at 71 Brewing, especially the packaging, sales and warehouse teams.
PREREQUISITES:
  • 2+ years commercial brewing experience
  • Ability to lift 25kg
PREFERRED
  • Internationally recognised brewing qualification and/or science degree in a related field
  • 3 years in a leading role in brewery environment
  • Forklift licence
DUTIES & RESPONSIBILITIES:
  • Oversee all aspects of the production process, from fermentation to maturation and filtration, ensuring quality and consistency in every batch.
  • Able and comfortable to be on the floor whether helping on the brew kit or with cellaring activities
  • Lead a team of brewers, coordinating activities and ensuring production schedules are met, and oversee and coordinate with the packaging manager and packaging team.
  • Develop and execute process improvements to enhance efficiency and product quality.
  • Maintain detailed documentation, analysing data to inform operational decisions.
  • Promote and enforce high standards of health, safety, and hygiene within the team.
  • Facilitate effective communication between the production team and wider external departments.
  • Conduct training sessions and mentor junior colleagues, fostering a collaborative and supportive team environment.
  • Monitor stock levels and manage inventory to align with production schedules.
  • Engage in professional development opportunities to stay at the forefront of brewing techniques and industry trends.
  • Involvement in external audits to ensure quality standard are maintained.
  • Take a lead role in new product development, and continuous product improvement.
SHIFT PATTERN
  • Monday to Friday 8-5
  • Split shifts during peak production: M-F 6am-2pm; 10am-6pm
DEVELOPMENT
  • Opportunities to pursue funded IBD qualifications
  • Opportunity to attend conferences and industry events on behalf of 71 brewing
REPRESENTATION
  • Attend and contribute to team meetings when required and share best practice with colleagues
  • Represent 71 Brewing at occasional exhibitions and events
PACKAGE
  • £36-45k per annum based on experience
