The Chef de Partie is responsible for taking care of a specific section within the kitchen, overseeing all food preparation, cooking, and presentation for that area. The role demands creativity, attention to detail, and the ability to work under pressure while maintaining high standards of quality and hygiene. MAJOR DUTIES & RESPONSIBILITIES Preparation and Cooking:
Prepare, cook and present dishes within your specialty.
Supervise and ensure the quality of the work of junior chefs and kitchen staff in your section.
Adjust and refine menus as needed based on ingredient availability and customer feedback
Kitchen Management:
Manage and train any commis, kitchen attendants or apprentices working in the kitchen
Ensure that all dishes leaving the kitchen are of the highest quality and presented in a visually appealing manner.
Monitor portion control and waste to maintain profit margins.
Hygiene and Safety:
o Ensure that all areas of the kitchen are clean and adhere to safety and health regulations.
o Take responsibility for the food hygiene practices in your section to prevent any health hazards.
o Ensure that all equipment is properly maintained and used correctly to avoid accidents.
Inventory Management:
Assist in ordering and controlling stock for your section, ensuring that quality ingredients are procured within budget.
Perform inventory checks and maintain an adequate supply of food and kitchen goods.
Collaboration and Communication:
Work with the F&B Manager and Head Chef to ensure consistent food quality and to develop new menu options.
Communicate actively with waiting staff to assure smooth service and to manage special requests or allergy considerations for guests.
Creativity and Menu Development:
Craft new menu items and daily specials, considering seasonal availability and current trends.
Participate in food trials and tasting sessions, providing feedback and suggestions for improvement.
