Role overview To function as a Chef De Partie for the Calo Kitchen, to work alongside the head chef to manage daily kitchen activities, including overseeing staff, aiding with menu preparation, ensuring food quality and freshness, monitoring ordering and stocking. The successful candidate will employ their culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers’ satisfaction. Main Responsibilities Leadership & Team Management:
Lead, mentor, and train a team of junior pastry chefs, bakers, and kitchen staff, fostering a positive and creative working environment
Oversee the daily operations of the pastry section, ensuring all tasks are completed efficiently and according to schedule
Ensure that high standards of hygiene and food safety are maintained in compliance with local health regulations
Quality Control & Consistency:
Ensure the highest quality and consistency in all pastry products, maintaining exceptional attention to detail in both flavor and presentation
Regularly review production methods to enhance efficiency without compromising quality.
Conduct regular tasting sessions and adjust recipes as needed
Inventory & Cost Management:
Manage inventory levels for all pastry ingredients and supplies, ensuring availability while controlling waste
Work closely with the procurement team to source high-quality ingredients at the best prices
Monitor and control food costs, ensuring alignment with the restaurant’s financial objectives
Operations & Planning:
Coordinate with the front-of-house team to ensure smooth delivery and timing of pastry items
Plan and execute special orders and requests for events, private dining, and seasonal offerings
Develop production schedules and delegate tasks to the pastry team, ensuring timely delivery of service
Ideal Candidate Qualifications
Proven experience as a Pastry Chef, with at least 6-9 years of experience in a high-end or fine-dining establishment
Strong leadership skills with a proven track record of managing a pastry team
Knowledge and competency
In-depth knowledge of pastry techniques, ingredients, and flavor combinations
Creativity and innovation in dessert presentation and flavor profiles
Strong understanding of food safety regulations and kitchen hygiene standards
Excellent time management skills and ability to work under pressure in a fast-paced environment
