Purpose of Position
- We are looking for an innovation-driven and detail-oriented Food Technologist with extensive experience in chocolate and compound decoration manufacturing, inclusions, and coating recipes, combines with scientific expertise with culinary artistry. The ideal candidate will have a proven ability to utilize data analysis techniques to solve production issues and optimize product formulations. They should be adept at collaborating with culinary professionals and cross-functional teams to create high-quality products.
Description of Main Activities/Responsibilities:
- Formulate new chocolate decoration products, including new ingredients, textures and flavors.
- Innovate with new ingredients and techniques to improve product quality and appeal
- Lead renovation and value improvement projects in the Chocolate Decorations, Toppings, and Fillable category.
- Utilize data analysis techniques to identify and solve production process issues.
- Collaborate with chefs and team members to create and test new recipes.
- Implement analytical procedures to develop Chocolate Decorations, Toppings, Inclusions, and Fillable products using natural colors and ingredients.
- Conduct pilot plant experiments for new product development.
- Develop and implement shelf life protocols for new products.
- Test raw materials and finished goods to ensure product quality.
- Set up and conduct quality testing procedures for raw materials and finished products.
- Optimize ingredients and formulations for product and process improvements.
- Collaborate with production to industrialize and to define all adjustments to adapt to production cycle.
Requirements:
- Food Chemistry: Strong knowledge of food chemistry principles and their applications in product development.
- Strong understanding of chocolate chemistry and physics.
- Ingredients and Raw Materials: Deep understanding of ingredients and raw materials used in chocolate and confectionery products.
- Data Analysis: Ability to interpret and synthesize analytical data to drive process improvements.
- New Product Formulation: Extensive experience in formulating new products from concept to market.
- Laboratory Techniques: Proficient in various laboratory techniques and procedures.
- Communication: Good communication skills, a team player, and capable of interacting productively with internal teams and external partners. Should be able to communicate well in English (written and verbal).
- Attention to Detail: Highly attentive to details, with the ability to build and manage comprehensive databases.
