The executive chef takes charge of ALL the kitchen operations. He/She makes sure that all dishes are prepared correctly and that meals get to diners in a timely manner. He/She develops recipes, plan menus and prepare food in collaboration with the top management and other workers in the kitchen as well as the head of operation. The executive chef must be able to keep up and update with the latest trend with regards to Japanese cuisines and conduct menu engineering.
Executive chefs must be familiar with food safety rules and restaurant health standards. Additionally, they must understand all aspects of the administration, which includes non-cooking tasks, such as overseeing ordering food and supplies, scheduling employees for work, managing the inventories. He must also be able to recommend on upkeep of all the kitchen equipment’s and wares.
SUPERVISORY RESPONSIBILITIES
Interview, select, train, supervise, counsel and discipline all employees in the department.
Provide, develop, train, and maintain a professional work force.
Ensure all services to members are conducted in a highly professional and efficient manner.
Ensure a safe working environment and attitude on the part of all employees in areas of responsibility.
EDUCATION and/or EXPERIENCE
Bachelor's degree (B. A.) from four-year college or university; or four years related experience and/or training; or equivalent combination of education and experience.
CERTIFICATES, LICENSES, REGISTRATIONS
Certificate of completion from trade school. Driver's License. Etc.
WORK CONDITION
Executive chef often works long hours, usually in overheated, crowded conditions. An executive chef must be able to handle the stress of working quickly while maintaining safety and quality.
We request your services to work on peak times but not limited to depending on the need and the load of operation including overseeing the preparation of and stock of mis en place. Management from time to time may request for you to work on special projects, events, etc. especially on peak days.
