Pit Master
Job Overview
We are seeking someone who is talented and passionate about barbecuing and desires to learn how to become a Pit Master. The ideal candidate will have a deep love of barbecue and curious and eager to learn techniques that barbecuing requires. This candidate should come with a strong commitment to quality food preparation. As a Pit Master, you will be responsible for learning how to run the smokers, maintain temperatures and ensure the wood and smoke are up to Les BBQ standards, overseeing the smoking and cooking of meats, and ensuring that every dish meets our high standards of flavor and presentation. This role requires creativity, heavy lifting, attention to detail, cleanliness, dependability, and the ability to work in a fast-paced environment.
SHIFT: Monday - Saturday 5am - 1pm (one day off & Sunday off)
Pay: $15 to start
90 day probation and performance review at 90 days

Key Responsibilities
- Fire & Wood Management:
- Maintain and manage the fire and wood supply, ensuring the smokers have a consistent fire and are stocked with wood throughout the day.
- Ensure that designated smoking temperatures are maintained consistently across all smokers.
- Meat Smoking Supervision:
- Supervise the smoking process of meats from the start to finish, ensuring that the timing and temperature of each batch are correct.
- Complete daily logs documenting the types of meats being smoked and quantities prepared.
- Meat Preparation & Trimming:
- Trim raw oxtails and other meats as necessary, ensuring proper preparation for smoking.
- Clean and sanitize all prep areas after meat trimming and smoking processes.
- Yard & Equipment Maintenance:
- Clean the yard, maintaining a neat and organized outdoor work area.
- Complete opening and closing chores for the yard, ensuring all equipment and tools are properly cleaned and stored.
- General Kitchen Duties:
- Assist with dishwashing and kitchen sanitation duties as needed.
- Ensure that all meats are smoked to LES BBQ standards of quality and flavor.
- Strong culinary skills with experience in the food industry, particularly in barbecue or grilling preferred.
- Knowledge of dietary requirements and food handling regulations.
- Experience in menu planning, catering, or working cook line is a plus.
- Proficient knife skills for preparing meats and other ingredients efficiently.
- Ability to work well under pressure while maintaining high-quality standards.
- Excellent teamwork skills with a positive attitude towards collaboration in the kitchen environment.
- Ability to read English, measure and follow recipes and directions.
