川菜總廚
Requirements:-
- 須具最少8年負責烹調川菜料理的工作經驗
- 掌握全面的菜餚烹飪知識，熟悉廚房生產流程和菜餚質量標準
- 具良好溝通能力及協調管理能力
- 可立即上班者優先
- 灣仔區工作
Responsibilities:-
- 執行所有廚房相關的管理工作
- 聯絡管理公司開發與管理新思路，食譜和菜單
- 開發正規的培訓計劃，並進行在職培訓工作人員
- 與其他部門研究對食品選擇、存儲和監督
- 有一定的組織安排，協調管理能力和嫻熟的烹調製作技能
- 要求懂得併掌握一個川菜菜系的基本製法，並了解其他菜系的基本製法
- 掌握一切川菜菜餚的烹製、菜餚烹飪知識，熟悉廚房生產流程和菜餚質量標準並保證出品質量
- 熟悉各種原材料的性能、特點，並協助爐頭按季節變化定期設計創新菜餚
- 積極配合餐廳，滿足賓客的各類要求，保證出口質量
- 嚴格執行衛生製度，以身作則搞好廚房的衛生工作，使食品衛生、環境衛生，個人衛生用具餐具衛生都能符合要求
每月薪金:
可達港幣37,000
