Bussing is a simple job, but it’s a vital one. A cluttered, messy table can ruin a guest’s experience, and clumsy or rude bussing can leave a very bad impression. Additionally, the flow of the dining room demands efficient, quality bussing. The Coordinator can’t meet their promised wait times without you, and when there’s a bottleneck in the dining room, good bussing can mean the difference between a dish hitting a table hot and fresh or sitting in the window cold and soggy. The primary duties of a Busser consist of:
Bussing - removing dirty dishes and trash from the table and taking them to the dish station
Turning - cleaning tables, chairs, floors and surrounding area, then resetting the table with clean plates, new silverware and fresh condiments
Pre-bussing - removing unused items from tables between courses
Informing the Seater / Coordinator when tables are ready to be sat
Getting refills for beverages
Assisting the ESP’s
Helping out with bottlenecks
Paying special attention to complicated information like credit card numbers, delivery addresses, special instructions / notes, etc.
Providing accurate promise times for Pick Up and Delivery orders
Answering common guest questions
Taking messages for management
Backing up other FOH employees
