Distiller

Title: Distiller
Location: Killarney Brewing & Distilling Company - Fossa
Reporting to: Distillery Manager / Head Distiller
Role: Operating all activities of the spirit production operations.
The Distiller is directly responsible for operating and maintaining all activities of the distilling production operations in an environmentally friendly manner to realise the safety, quality, quantity, cost, and service objectives of the business.
Ensure Pot still, Single Malt, GNS and Grain new make spirit is produced safely and efficiently within agreed budgets with high importance given to complying with the Irish Whiskey Regulations.
Help establish laboratory testing of all processes to ensure product quality and that all environmental discharges are monitored. Maintain detailed process logs.
Ensure all inventory and stock levels are replenished.
Assist head distiller in casking and blending operations to ensure that existing & future brands are consistent in quality now and in the future.
Assist head distiller in ensuring co-product deliveries are met on time and that quality standards and good record keeping are maintained.
Work with Head Distiller to develop new styles of spirits for single pot and single malt recipes. A good knowledge of innovation techniques and familiarity of different yeast strains would be advantageous here.
Knowledge of warehouse operations and ability to monitor maturation of all whiskies.
Main duties and responsibilities:
  • To safely operate plant and equipment to achieve company KPIs, production targets whilst conforming to company and government rules & regulations
  • Develop SOP’s and logbooks to ensure Distillery is operationally safe and compliant
  • To act as and to train, develop and coach future distillery operators.
  • To ensure that the established procedures and specifications are adhered to, in order to maintain product quality and production efficiencies.
  • To ensure that good manufacturing processes are always adhered to and that any production issues that may arise are reported to the distillery manager.

  • To ensure and improve operational performance of equipment and organisation, at lowest possible cost and if necessary required modification / adaptation in line with agreed budgets.

  • Achievement of Key Business Objectives
  • Repairs and Maintenance
Skills & Experience :
  • Minimum 3 to 5 years in food manufacturing /pharmaceutical industry. Distilling experience is essential for this role.
  • Degree/Certificate in Brewing and Distilling, Science / Engineering and or Manufacturing. Trade qualification also accepted.
  • Pot or Grain distilling experience preferred.
  • Practical experience in planned maintenance and safe operation of plant equipment.
  • Forklift licence not essential, but desired.
  • IT (MS Office), Microsoft word, Excel, Power Point.
